This dill and chilli shrimp is a classic at my parent’s house. It’s incredibly quick and easy to make and is always a hit at dinner parties and you usually have most of the ingredients at home.

Dill as we all know goes great with seafood, and this dish is no exception. And using a combination of both dill seed and fresh dill and great depth of flavour. The dill seed add hints of anise and caraway (if you can’t get dill seed you can substitute it with caraway seed) while the fresh dill adds hints of lemon and and anise.

One of the things I actually love about this dish is the hint of sweetness you get from both the tomatoes and the and the shrimp. That sweetness combined with the freshness of the dill makes for a very refreshing dish that works year round.

This is definitely one those dish that once you’ve made it will become part of the permanent repertoire.

Ingredients

The Dill & Chilli Prawns

  • 1 tbsp vegetable oil
  • 1 medium onion chopped
  • 1 medium green chilli finely chopped (seeds are optional)
  • 1 garlic clove minced
  • 1 tsp dill seed, toasted and crushed
  • 1 tbsp tomato paste
  • 1 can of crushed tomatoes
  • 1 tbsp dill finely chopped
  • 150g king prawns
  • Salt and pepper

Dill & chilli Oil

  • 1 tbsp dill finely chopped
  • 1 garlic clove minced
  • 1 medium green chilli finely chopped (seeds) optional
  • 2 tbsp extra virgin olive oil
  • Brown and wild basmati rice (to serve)

Method

  1. Heat a deep pan on a medium heat. Add the oil followed by the onions and chillies. Cook until the onions become translucent, then add the garlic and crushed dill seeds. Cook for 1 minute then add the tomato paste.
  2. Cook for a minute or two then add the chopped tomatoes and and fresh dill and cook for a further 10 minutes. Stir in the prawns and cook for 5 minutes or until the prawns are cooked through, make sure to season with salt and pepper. Serve with brown and wild basmati rice
  3. For the dill and chilli oil, combine all the ingredients. Drizzle a little over each serving.
